Five things go into nearly every cake we bake. None of them come from a catalog. All of them have names you'd recognize from a farmer's market.
Five core ingredients make up the spine of nearly every cake we bake. None of them come from a wholesale catalog you've never heard of.
Vermont Creamery and Plugrรก.Higher butterfat (~84%) than standard American butter, which means richer crumb and a cleaner flavor. We don't bake with margarine. Ever.
Mill King Farms in Granbury.Pasture-raised, picked up twice a week. We crack every egg into a clear bowl first โ it's old-school but it catches a bad one before it ruins a batch.
Round Rock Honey.Texas wildflower honey, raw and unfiltered. The flavor changes slightly with the season, which means our signature glaze does too. We consider that a feature.
King Arthur and Central Milling.Organic unbleached all-purpose for most cakes; cake flour where we want a finer crumb. No bleach, no bromate, no preservatives.
Whatever's in season locally.Strawberries from East Texas in spring, peaches from Fredericksburg in summer, apples from Tyler orchards in fall. We don't bake with frozen fruit.
Valrhona and Guittard.70% dark for our chocolate hazelnut, 38% milk for finishing drizzles. We melt our own โ never use chips or candy melts.
The list of things we don't bake with is almost as important as the list of things we do.
If a cake says "vanilla," it was made with real vanilla bean or pure vanilla extract โ never imitation.
Our cakes go stale on day 4. That's not a bug, that's the point.
The pinks come from beet powder, the yellows from saffron or turmeric, the greens from matcha or spinach. (Yes, spinach.)
Cheaper, faster to bake with, and not what we use.
Honey, real maple syrup, brown sugar. That's it.
Real names, real people, real farms. The folks whose work makes ours possible.
